Patrick operates the Nantucket restaurant, Island Kitchen, and is the #1 catering operation on Nantucket island. He recently expanded catering operations to Palm Beach and Naples.

Prior to launching Island Kitchen (IK)  in 2014, what was your previous professional life? Can you recall  a specific moment or circumstance where you realized “I’m really doing this?”​​​

Patrick: Before IK - I was an executive chef of a French restaurant and then a private chef . The first busy Sunday brunch at IK was when it all hit me.

What is one part of running your business that you couldn't have predicted you’d enjoy as much as you do?

Patrick: The incredible relationship with long-standing staff - never thought that I would be able to say I have had so many people onboard who started with me on day 1.

​

How did the expansion to Palm Beach evolve? What do you love most about the area - and the people?

Patrick: The excitement of expanding in a new location - love being a warm weather area with a growing economy.

You’re out to dinner with friends on a Friday evening. Where are we headed? 

Patrick: By Friday night i would have been to Lenora's multiple times so my go to would be Echo.

​

People love to entertain here. What are your best tips in crafting a really good menu for guests?

Patrick: Have lots of variety!  Creating a balanced menus that hits all allergies and aversions while keeping things fresh and fun.

​

How would you describe your approach to food and hospitality in 10 words or less?

Patrick: Buy the freshest product possible & do as little as needed to present it in a quality fashion.

​

When you’re not working/cooking/entertaining, what are some of your favorite things to do locally?

Patrick: Spend time with my family, play tennis, and go fishing.

What featured Privet event are you most excited about attending? 

Patrick: Express tour at the Norton!

​

In the last decade, is there still a particular catering client or event - that has - and always will - remain memorable?

Patrick: The first time we did a large scale event in Miami at the Rubell Museum for the Formula 4150.

​

For folks new to Island Kitchen’s catering services, what do you think they’ll love the most?

Patrick: High level customer service, ease of experience on the host, mobile kitchens allow for a seamless catering opportunity without being in their space, low impact on their home.

​

The last question and arguably the most important :) When is Island Kitchen Ice Cream counter coming to Palm Beach?

Patrick: Hopefully Fall of 2024!​​​
